Abstract


In today's conditions, the brewing industry is one of the leading branches of the food industry. This is evidenced by the large number of breweries, private breweries, restaurants with their own small breweries. This has created fierce competition in the industry. Each company has an important task - to reduce the cost of production by reducing the duration of individual stages, individual processes in compliance with specified quality indicators. But the use of technical means alone does not make it possible to fully assess the course of processes. Therefore, it is recommended to create algorithms and process control systems using modern technologies, in particular, artificial intelligence technology, machine logic. As a result of the development of a "smart" computer control system for the production of beer in the fermentation department, it is planned to ensure the stabilization of the regime parameters of the production process, which can ensure high quality of finished products. It is proposed to develop a computerized production management system, where the top-level nodes will process situations and select solutions based on different intelligent algorithms and scenarios using different computing resources, including those performed using different software and other tools. As a result of the development of a "smart" control system for beer production in the fermentation department, it is planned to ensure the stabilization of the regime parameters of the production process, which can ensure high quality of finished products. It is proposed to develop (investigate) cognitive models of algorithms of the computer system of production management, where in the nodes of the upper levels will be processing situations and choosing a solution based on different algorithms and scenarios using different computing resources and tools.
